Definition: For a distinctly 'Rican twist on a Thanksgiving classic, you've got to try a pavochón. Pavochón is a roast turkey dish in Puerto Rico that gets its name from the way it is prepared, marinated and cooked...just like the slow-roasted suckling pig that is known around here as Lechón and is a delicacy for any meatlover.
Want to know how it's done? Here are two great recipes:
- A Pavochón recipe from "The 'Rican Chef" with complementary mofongo stuffing.
- This recipe comes from About.com's Latin Caribbean Food guide Hector Rodriguez.
