My guess is the average tourist won't be rushing to try this local specialty. Gandinga is a hearty stew made with the less choice parts of the pig or cow, such as tripe, kidneys, heart, and liver. But, if you like sweetbreads and steak-and-kidney pie, chances are you'll like this heavy, satisfying criolloclassic.
