Arroz con Pollo

Definition:

Literally "chicken with rice," arroz con pollo is a remarkably consistent dish across the Americas and Spain. It is as simple as it sounds: chicken and rice cooked with vegetables, spices, and saffron (with other optional additions like peas and red peppers).

While it originated in Andalusia, several nations have adopted it as an unofficial national dish, and Puerto Rico is no exception. One departure from the traditional recipe that you may find here is the use of achiote, or annatto seed, oil instead of olive oil.
